Our Green Gold

The "Goccia natura" oil is a pure Monovarietale extravergine olive oil, cold extracted with mechanical procedures and obtained by pressing 100% Italian organic olives, with a fruity taste of intense color, with medium spicy sensations, very harmonious, fragrant, entirely produced in the family farm located on a hill in a historic territory. It is there that we have been cultivating the best local "Cerasuolacultivar for generations. The balanced taste of our extra-virgin oil comes from a particular peciality of the location of the land that we treat with extreme care from the field to the milling.

The quality of our extra virgin sweet taste and the almost non-existent oleic acidity index begins in fact from the cultivation and more precisely from the olive tree pruning, entrusted only to expert hands to ensure an optimal distribution of the fruits on the crown and a greater aeration and lighting of the plant, indispensable premises for the perfect ripening of the olives ..

"BIO" method

Because our oil is genuine to the end, we entrust the phytosanitary defense of plants exclusively to natural methods, without the help of chemicals and pesticides. So for example against the olive oil fly we use a natural mixture that attracts the fly in a rudimentary trap, while fighting the oziorrinco armed with simple rock wool, which we patiently wrap around each single trunk to trap this unpleasant parasite before it even succeeds to reach the crown.

So we wait, in a thousand tricks, the perfect moment to reap the fruits of our work. When the olive, from green that was, assumes the typical color of its variety here is the veraison, here is what we were waiting for. In this precise phase (20% -30%), not a few days before or a few days later, the olives are harvested by hand and with the help of electric choppers and transported to the crusher in perforated boxes to promote ventilation, rigorously cold within a few hours. Only in this way we are sure to obtain a low-acidity oil rich in fruity and polyphenols, perfect to accompany the most varied recipes, both cooked and raw.

We love practically every dish, even dessert. You start to try it with meat and fish, roasts, and to season vegetable soups, sauces and salads or come to visit us to taste it alone, on a warm Sicilian durum wheat bruschetta.

 

The oil is stored naturally in stainless steel containers. At the end of natural decantation is packaged in bottles of L 0.75 and 5 L tank with appropriate identification of the lot to which it belongs and of the analyzes carried out by an accredited body and precisely by the chemical laboratory AGENZIA DELLE DOGANE DI PALERMO (Chemical analyzes 2017-2018).
